Product Development for Frozen Retail Product
Scaccia
Scaccia will work with George Brown College to develop and commercialize the Scaccia sandwich product as a tasty, nutritionally responsible, frozen retail food product to make the product more accessible to consumers. This project will involve evaluating existing restaurant recipes (both dough and scaccia filling) for freeze-thaw capabilities. Dough and filling assessment will also be conducted. Ingredients for both dough and filling will need to be sourced that work in a frozen food. A particular challenge will be to produce a tasty product that is similar to the existing foodservice version, that has a crisp crust when heated in the oven while remaining nutritionally responsible (e.g. sodium content).
