Luisella: Nut-Free Chocolate Spread Category Review & Product Optimization

George Brown College’s Food Innovation & Research Studio (FIRSt) is collaborating with Luisella Foods Inc. (Luisella) to complete a category review for, and optimization of, their nut-free chocolate spreads. Patricia Di Chiara, owner of Luisella is the creator of the nut-free chocolate spread. She moved from Italy to Canada with her family over a year ago and is a graduate of the Culinary Management program at Georgian College. When she realized the lack of nut-free chocolate spreads that are made from healthier oils in the market, she went on to develop her own versions, including original smooth, crunchy, espresso, and cinnamon. Luisella has approached FIRSt to review their current prototype formulations and optimize the nut-free milk chocolate spreads to achieve product consistency.
